Now that we have fine tuned everything we are going to cook and serve and bake and buy, the fun begins with the wine list. First things first, champagne; for a dinner without pre dinner champagne is but a mere meet up so please serve your guests, champagne. Ruinart or Dom if we want to push out the boat. I hate to be that person but Dom really is a good champagne, it really is and yes it is not cheap so don’t put yourself out, Ruinart is a fine bottle of champagne too so between both you should be very well served. And whilst you’re at it, get some flutes. There’s a myth about serving champagne in coupes because Marie Antoinette and the myth of the shape and whilst coupe might look fashionable, the flute is the more superior serve of champagne. I know, I tried it so you don’t have to.
Aside, I also love to talk about that coupette and Marie Antoinette because I feel like she is one character I would bring back to life… her and Anne Boleyn.
