The Kitchen Table – Simple Spaghetti


This is a simple meal for one on days when you do not feel like going outside to forage for food, ordering in, or eating rice… we are now in the thick of summer proper so this is perfect for something light and more important easy.

It’s easy, dead easy and it weird that even in the thick of heat I always crave a pasta, or spaghetti but it is easy and one of those meals you can look into your pantry and are sure you have all the ingredients to make, even if the garlic is reaching its end of days…


INGREDIENTS:


  • Half a packet of spaghetti
  • extra virgin olive oil
  • salt
  • nob of butter
  • 5 cloves of garlic
  • chilli flakes
  • Thyme

PREPARE:


Bring three cups of water with the extra virgin olive oil and sal to a boil

add the spaghetti to the boiled water and leave to cook. (DO NOT SNAP THE SPAGHETTI LIKE A HEATHEN!) the more it softens it’ll just slide into the put. Cook between 7-10 minutes aldente is always how it is served.

With the spaghetti boiled remove some past water, and strain the rest of.

In a HOT cast iron sauce pan melt the nob of butter, taking care not to brown, we are not baking we are cooking

Add in the garlic, chilli flakes and thyme. A bit of salt if you will and let is fry for about three minutes.

Add in some spaghetti water, much or little as you like.

Add in the spaghetti and stir to coat completely.

Plate and eat, no cheese necessary, actually, strictly no cheese at all needed.


PAIR: It’s Rosé season so let’s pop a bottle of AIX Rosé that will go so well with this simple meal.
