Pancakes For Lunch- Bad Aunty


Baby sitting weekend is my favourite with my cheeky two year old nephew who talks back, claps back and asks why. A LOT. I love it. It is also my chance to be the cool fun aunt that flaunts the rules before giving him back to his parents. We keep it secret until of course he asks for sweets for breakfast.

After watching too many episodes of Teenage Mutant Ninja Turtles, all episodes and the movies, we fell asleep with a big bowl of popcorn wedge between us. We woke up at 11am and had popcorn for breakfast with chocolate milkshake. It was a long night we didn’t get to bed until 1am, but good thing it wasn’t a school night. When asked what he wanted to have for lunch, little man said pancakes! Naturally, I had to oblige.

Enter my special blueberries and banana pancakes. Heavenly.

Ingredients

  • 1/2 teaspoon baking powder
  • 1 cup plain flour
  • 1 teaspoon of vanilla essence
  • 1 or 2 eggs
  • 2 tablespoons of golden caster sugar
  • Pinch of cinnamon
  • Pinch of Nutmeg
  • Pinch of salt
  • (Bob’s your uncle)- sorry, I’ve always wanted to say that. Uncle Bob is not a feature in this.

Toss the dry ingredients together- flour, baking powder, sugar, and salt. If you have the patience to, sift the flour, if not don’t. Mash the bananas and blueberries together in a bowl toss in the nutmeg and cinnamon, break in the eggs, one at a time, and blend, blend, blend. Once well blended, (may I never use blend again), toss in with the dry stuff and fold until well incorporated- that is a terrible word when talking about food. Put a small skillet on medium heat, (I like a small one because its easy to control and contain the batter so it comes out nice and fluffy) half a teaspoon of butter, once melted scoop a ladle of batter and let the pancake fry until golden brown. Give each side about a minute to cook, or go with your gut. Whilst this is cooking, grill the sausage and bacon if you’re having any.

Sprinkle the syrup, eat, enjoy, repeat. Nutella is optional… or not.
